Because for me it's the easiest thing to make. to keep, and most of all to eat!!!!
And I have to make it for my family almost every week.
But cookies are not boring, there are many, many, and many recipes for many kinds of this simple sweet (OK. some of the recipes are not simple, haha). You can make soft, hard, crispy, ice boxed and etc.
Anyway, this time is a simple soft cookie. With white chocolate and pecan, this sweet and nutty cookie is the best companion to hot coffee and black tea. This thin cookie will harden after cooling (and keeping) from the baking soda. I think it's good to share (half of) it with your friends as it's the most delicious when freshly baked.
White chocolate pecan cookies
Makes 13 pieces
130 g ................... Pecan nuts
120 g ................... Unsalted butter
1/4 tsp ................. Salt
1/2 tsp ................. Vanilla extract
110 g .................... Brown sugar
30 g ..................... Granulated sugar
40 g ..................... Egg
120 g .................... All-purpose flour
1/2 tsp .................. Baking soda
130 g ..................... White chocolate, chopped if large
Preheat an oven to 180℃
Bake the Pecan nuts in the 180℃ preheated oven for 7 minutes. Chop and let it cool completely.
Beat the butter with salt and vanilla extract until smooth.
Add both kinds of sugar and beat to combine.
Pour the egg into the bowl and beat to combine.
Sift the flour and baking soda into the bowl.
Put the white chocolate and pecan nuts into the bowl.
Fold to combine.
Use a 5.5 cm scoop to scoop the cookie dough onto a baking sheet. Press lightly with a fork.
Bake in the 180℃ Preheated oven for 14 minutes.
Let the cookies cool completely on the baking sheet.
