Golden Sandwich Bread


One of the menus that I make very often is sandwich bread.



Actually, it came from the fact that I bought new sandwich bread pans from Japan. It took a lot of time for me to decide, as I have many, many sandwich bread pans in my storage!!!  Finally, I couldn't resist as the bread that comes out from the pan is so beautiful (btw. I don't sell the pans and I buy them by myself, it's not a sponsored post ^^). 
The bread that's made with this pan will be wider and the side will be straight, or I have to say that I really love the result, haha.



All I can do is baking sandwich bread, again and again, to get beautiful bread (in my opinion) haha
After baking many recipes, I think it's time to share my favorite recipe. This Golden sandwich bread is very delicious, and because of the egg, the bread will rise beautifully and it gives the bread lovely golden color too.
It has a lovely fragrance from both egg and butter, and not too sweet, so you can use it in both sweet and savory menus.

I use Diastatic malt powder in this recipe, but if you don't have it you can omit it, but adding it will make the bread rise better and give the crust yummy color.


Golden Sandwich Bread
Make with a 13 × 20 × 13 cm loaf pan 


Bread dough
380 g ..................... Bread Flour
25 g ......................... Granulated sugar
4  g .......................... Diastatic malt powder (optional)
2.5 g ......................... Instant yeast
7.6 g ......................... Salt
120 g ........................ Water
4 g ............................ Water (if using Diastatic malt powder )
100 g ....................... Milk
76 g .......................... Egg
9 g ............................ Honey
32 g ......................... Unsalted butter
Finishing
1 ............................... Egg
15 g .......................... Milk
 ................................. Unsalted butter



Put the bread flour, sugar, Diastatic malt powder, and instant yeast into a bowl of a stand mixer. Mix at low speed to combine.

Mix in the salt at low speed.


Pour the milk, and water into the bowl.

Pour the egg and honey into the bowl, knead at medium high speed (for Bosch universal plus, I use 3). Knead for 8 minutes.

Adding the butter and knead at medium high speed (for Bosch universal plus, I use 3)  for 6 minutes more.


Remove from the bowl.

Form the dough into a ball.

Brush a pan with unsalted butter, place the dough into the pan, and cover with plastic.

Let it rises for 1 hour.

Cut into 3 equal pieces.

Roll each piece into a ball.

Rest before shaping for 40 minutes.

Meanwhile butter a 13 × 20 × 13 cm loaf Pan with butter.

Pat each ball into a 20 x 18 cm. rectangular.

Fold the dough from both sides to the center.

Roll the dough.

To form a tight cylinder.

Do the same for the rest of the dough.

Place the shaped dough into the prepared pan.

Cover and let it rise for  1.40-2 hours. 

Or until it almost rises above the pan.

Before baking preheat an oven to 200℃

Mix the egg and milk together.

Brush the top of the dough with egg wash (egg and milk mixture).

Cut in the center of the dough with a knife.

Place unsalted butter into the center of the cut.


Bake in 200℃  Preheated oven for 30 minutes


Let it cool completely on a wire rack.
