One of the baked goods that my family really loves is a cookie.
As I said that we always have a jar (or 2) of cookies on the kitchen counter ^^, and the flavor that my mom loves most is coffee.
Today, the recipe that I will share with you is a coffee-flavored cookie but it's special than before as it comes with white chocolate and macadamia nuts.
So, I called it "Café au lait cookies" as it has sweetness and richness from chocolate and nuts. It's an icebox cookie recipe, well I love this kind of cookie because we can keep it in the fridge and bake it when we want to eat it. You can keep it for a month, just remember to cover it tightly to prevent the cookie dough from freezer burn.
It's easy to make, but you have to chop both chocolate and nut finely, as the large pieces of them can make the cutting more difficult.
Café au lait cookies
Makes 23-24 cookies
100 g ...................... Unsalted butter
1/4 tsp ................... Salt
1/2 tsp ................... Vanilla extract
100 g ..................... Brown sugar
40 g ....................... Icing sugar
1 ............................. Egg yolk
1/4 tsp ................... Salt
1/2 tsp ................... Vanilla extract

1 1/2 tbsp ............... Instant coffee granules
1 tsp ........................ Milk
150 g ...................... All-purpose flour
1/8 tsp ................... Baking powder
100 g ...................... White chocolate, finely chopped
100 g ...................... Macadamia, finely chopped

Put the butter, salt, and vanilla into a bowl. Beat until smooth. Put both kinds of sugar into the bowl, and beat to combine.
Mix the instant coffee granules and milk together.
Put the egg yolk and coffee mixture into the bowl, and beat to combine.
Sift the flour and baking powder into the bowl.
Put the chopped white chocolate and chopped macadamia nut into the bowl.
Fold to combine.
Remove the cookie dough from the bowl onto a piece of baking paper.
Cover with the paper, shape it with your hands into a 25 cm. log.
Refrigerate for at least 2 hours.
Before baking preheats an oven to 180℃.
Cut the cookie dough into 23-24 pieces (about 1 cm. per piece).
