Coffee Walnut Cake


Walnuts, coffee, and butter are classic combinations.



There are many recipes for a coffee walnut cake, that has walnut butter cake and coffee buttercream. โAnyway, for today I wanted to eat this cake but I didn't want to eat buttercream, so I had to make some adaptations to suit my mood. 

I turned the classic cake into a very nutty cake instead and yes, I added coffee into the cake batter instead of using the buttercream

The result, ^^ I got a nutty coffee butter cake that I think it's very delicious, haha.
Well, if you love butter cake I think that you will love this cake too.
I drizzled the cake with coffee icing that you can omit, but I really recommend you to make it, it's easy to make, and when eating it with the cake and chopped walnuts, the cake is more yummy.
If you don't have the same pans as me you can use an 18x18 cm pan instead (but the baking will be a bit different).


Coffee Walnut Cake
2 of 15cm Kugelhopf pans (or 1 of 18x18 cm pan)


Cake
100 g ........................ Walnuts
80 ml ........................ Milk
1 tbsp ........................ Instant coffee granules
125 g .......................... Cake flour
1/2 tsp ....................... Baking powder
125 g .......................... Unsalted butter
1/8 tsp ........................ Salt
120 g ........................... Granulated sugar
2 ................................. Eggs

Coffee icing 
40 g ............................. Icing sugar
1/4 tsp ......................... Instant coffee granules
1 1/2 tsp ...................... Milk

Decorating
................................... Walnuts, chopped



Preheat an oven to 180℃

Butter 2 of 15cm Kugelhopf pans (or 1 of 18x18 cm pan) and set aside.


Bake the walnuts in a 180℃  Preheated oven for 5-7 minutes.

Chop and let it cool completely 

Mix the milk and instant coffee together and set aside.


Sift the flour and baking powder together and set aside.


Beat the butter with salt until softened. Gradually add the sugar and beat until combine.

Put the eggs into the bowl and beat to combine.

Pour half of the sifted flour into the bowl and beat to combine.

Pour the coffee mixture into the bowl and beat to combine.

Put the rest of the sifted flour into the bowl with chopped walnuts. 


Fold to combine.

Divide the batter into the prepared pans.

Bake in 180℃  Preheated oven for 30 minutes.


Let it cool in the pan for 10 minutes.

Remove the cake from the pans and let it cool completely on a wire rack.

Mix the icing with instant coffee and milk.

Drizzle the icing over the cake.


Decorate with chopped walnuts before serving.
