Molten chocolate cake

Well, I rarely follow the trends, or you can say that I'm a bit out of trends, haha.

Because when someone talked about the Molten chocolate cake, all I can think of is the traditional one, the rich chocolate cake with the creamy chocolate sauce inside that you have to serve while it's still warm.
But now the Molten chocolate lava cake that's very popular in Thailand is the chocolate cake with a load of chocolate sauce and cocoa powder on top, ^^"

So, when I was asked to make Molten chocolate cake, I made this one instead of the popular one, haha.
Anyway, I will make that Molten chocolate cake for sure !!!! 
This traditional Molten chocolate cake, it's very easy to make, the only tricky part is baking and serving. As each oven acts differently, so you have to adjust the baking time (and temperature) to suit yours. 
You can prepare this dessert ahead of time, by making the batter and pour it into the molds and refrigerate, bake it just before serving (and remember that the baking time will be different). 





Molten chocolate cake
Makes 4 of 6.5 cm. Molds


120 g  .................... Unsalted butter
120 g ..................... Dark Chocolate 
70  g ...................... Granulated sugar
1/2  tsp .................. Instant coffee granules
1/2 tsp .................... Vanilla extract
2 ............................. Eggs
2 ............................. Egg yolks
30 g ........................ All-purpose flour
................................ Icing sugar for sprinkle over the top





Preheat an oven to 200℃.
Line 4 of 6.5 cm. molds with baking paper.


Put the butter and chocolate into a microwavable jug. Heat in a microwave  (600W) for 1-1.30 minutes.


Put the sugar, instant coffee granules, and vanilla into the jug.


Blend until fully combine.
Let the mixture cool for 15 minutes.


Pour eggs and egg yolks into the jug. Blend to combine.


Pour the flour into the jug.


Blend until smooth.


Bake in 200℃  Preheated oven for 13-14 minutes.


Let it cool in the molds for 30 seconds to 1 minute, then remove from the molds.


Sprinkle the icing sugar.
Enjoy while still warm.
